This wine produced from the grape harvested in late November. During late harvest grapes exposed to botrytis/nobles rot, which is a variet of fungus that grow on the top of the skin. This method, considered to be the risky move by the winemaker. As botritis provide complexity to the flavour, it can distroy the entire harvest.
